Beet & Orange Spinach Salad with Goat Cheese

This salad is easy to make but looks so sophisticated. Any time segmented oranges are involved I think it adds something special to a dish. I use packaged, precooked beats (I’ve been seeing these everywhere in the grocery store lately; Costco has them too), which are greatly enhanced with a tangy balsamic dressing. The goat cheese adds a perfect, creamy tang to the tartness of the oranges and balsamic.

Ingredients
1 package of precooked beets (4 medium sized beets, cooked)
3 navel oranges
1 bag of spinach
4-8 oz goat cheese (I make the goat cheese a main feature of the salad, but you can use less as desired)
4 tbs reserved fresh orange juice
1/4 cup olive oi
1/4 cup of balsamic
1 clove of garlic, grated
Salt & pepper to taste

Directions
1. Cut the beets into quarters or eights depending on how big they are. Segment the oranges. Here is a good tutorial on how to do that.
2. Whisk the olive oil, balsamic, grated garlic, and orange juice together until emulsified. Salt and pepper to taste.
Note: I like my balsamic dressing very acidic. Taste and adjust your dressing to your liking.
3. To prepare the salad, layer the beets and oranges over the spinach, drizzle balsamic, and crumble the goat cheese. I cracked extra black pepper on top for flavor and presentation.
