This lemonade looks normal, but it has a bright and refreshing twist: fresh mint! I infused the lemon juice overnight so that the mint flavor was there but you don’t have to deal with muddling mint or accidentally sucking a bit of it up through your straw. It’s an easy way to add a special twist on lemonade.
Ingredients
2 cups freshly squeezed lemon juice
2 1/2 cups of very tightly packed, washed mint leaves (I used spearmint)
3-4 cups water (depending on how tart you want it)
1 1/4 cups superfine sugar
Ice
Sliced lemon for garnish (optional)
Directions
1. In a food processor or blender add the lemon juice and mint. Blend until mint is in small pieces. Place in a sealed container in the fridge overnight. The mint probably will turn brown, but don’t worry. It won’t affect the flavor or color of the juice.
2. Strain the lemon-mint juice into a pitcher. Add water and sugar, stir until sugar dissolves. Add ice and optional garnish.
